St. Patrick’s Day Cheesy Spinach Dip & Shamrock Chips

It’s St. Patrick’s Day, and we all know what that means: green beer and corned beef and cabbage! But it also means an opportunity to eat some delicious food like this cheesy spinach dip with shamrock chips recipe.

This is the perfect appetizer for your St. Patty’s Day party because it combines two of our favorite things: dips and chips!

Shamrock Chips

  • Spinach Tortillas
  • Shamrock Shaped Cookie Cutter
  • Oil Spray

St. Patrick’s Day Cheesy Spinach Dip

  • 9 oz Package Frozen Spinach (squeezed and drained)
  • 1 Cup Shredded Parmesan Cheese
  • 2 Cups Shredded Mozzarella Cheese
  • 1 Cup Sour Cream
  • 8 oz Cream Cheese (Softened)
  • 1 Tbsp Chopped Garlic

How to Make this Delightful Chips & Dip

Make the Tortilla Chips

Preheat oven to 350 degrees.

With your cookie cutter, cut out shamrock shapes from the tortillas.

Place them on an oil sprayed cookie sheet, then spray the tops with oil as well.

Place in oven and bake for 8-10 minutes. While they’re baking prepare the dip.

Remove and let cool.

Make the Cheesy Spinach Dip

In a medium-size skillet, add the mozzarella, parmesan, sour cream, and cream cheese.

Mix together and cook over low to medium heat until melted.

Add spinach and garlic, mix well. Continue to heat for additional 3-5 minutes.

Ready to serve with your shamrock chips! Enjoy!!

How to Serve

Serve the dip in a cast-iron skillet or any other dish that can go from oven to table. You could also put it in a pretty bowl and let your guests help themselves.
