Ingredients
 

  • 1 Pound potatoes cut in half
  • 2 Tbsp olive oil
  • 4 Tbsp butter
  • 1 Tsp garlic powder
  • 1 Tsp onion powder
  • ½ Tsp dried rosemary
  • ½ Tsp dried thyme
  • Salt and pepper to taste
  • Cup parmesan cheese

Instructions
 

  • Preheat the oven to 425 degrees. Pour the olive oil in the bottom of a baking dish. Add the potatoes on top.
  • Sprinkle the garlic powder, onion powder, rosemary, thyme and salt and pepper. Top with the butter, distributing it evenly on top and finish sprinkling half of the parmesan cheese.
  • Take to the oven and bake for 40 minutes or until the potatoes are done (fork tender and golden).
  • Remove from the once and toss to combine. Sprinkle with more parmesan cheese and return to the oven for 5 minutes.

Notes

  • I used baby potatoes because the skin to potato ratio is amazing! You can use normal potatoes and just cut them into medium sized chunks.
  • You can also add a bit of smoked paprika and chili flakes to give them a spicy kick!
