Parmesan Herb Roasted Potatoes
Ingredients
- 1 Pound potatoes cut in half
- 2 Tbsp olive oil
- 4 Tbsp butter
- 1 Tsp garlic powder
- 1 Tsp onion powder
- ½ Tsp dried rosemary
- ½ Tsp dried thyme
- Salt and pepper to taste
- ⅓ Cup parmesan cheese
Instructions
- Preheat the oven to 425 degrees. Pour the olive oil in the bottom of a baking dish. Add the potatoes on top.
- Sprinkle the garlic powder, onion powder, rosemary, thyme and salt and pepper. Top with the butter, distributing it evenly on top and finish sprinkling half of the parmesan cheese.
- Take to the oven and bake for 40 minutes or until the potatoes are done (fork tender and golden).
- Remove from the once and toss to combine. Sprinkle with more parmesan cheese and return to the oven for 5 minutes.
Notes
- I used baby potatoes because the skin to potato ratio is amazing! You can use normal potatoes and just cut them into medium sized chunks.
- You can also add a bit of smoked paprika and chili flakes to give them a spicy kick!
