Parmesan Herb Roasted Potatoes
Turn regular old potatoes into a side dish that might just outshine the main course! Add these parmesan herb roasted potatoes to next week’s “to eat” list… you won’t regret it.

- 1 Pound potatoes cut in half
- 2 Tbsp olive oil
- 4 Tbsp butter
- 1 Tsp garlic powder
- 1 Tsp onion powder
- ½ Tsp dried rosemary
- ½ Tsp dried thyme
- Salt and pepper to taste
- ⅓ Cup parmesan cheese
Preheat the oven to 425 degrees. Pour the olive oil in the bottom of a baking dish. Add the potatoes on top.
Sprinkle the garlic powder, onion powder, rosemary, thyme and salt and pepper. Top with the butter, distributing it evenly on top and finish sprinkling half of the parmesan cheese.
Take to the oven and bake for 40 minutes or until the potatoes are done (fork tender and golden).
Remove from the once and toss to combine. Sprinkle with more parmesan cheese and return to the oven for 5 minutes.
- I used baby potatoes because the skin to potato ratio is amazing! You can use normal potatoes and just cut them into medium sized chunks.
- You can also add a bit of smoked paprika and chili flakes to give them a spicy kick!
