Easter Bunny Butt Cupcakes

Turn any cupcakes into these adorable bunny butt cupcakes with some pink candy melts, white chocolate, and colored coconut. This recipe uses a cake mix, but you could use your preferred homemade cupcake recipe or even use store-bought cupcakes!

Not only do they look extra special when you bring them out for friends and family or at gatherings and parties, but they can also be a great way to get the kids involved in the kitchen.

Many children love to be involved with cooking and baking, and these cute cupcakes are super easy to make and a lot of fun to create. 

The white boxed cake mix really does take all of the hassles out of baking. You just need a few simple ingredients to combine with the cake mix, and you are ready to make delicious cupcakes. This is all in the decoration, and while it may seem like making these could be a little complicated, I have simplified it down, and they look super cute.

This is the perfect activity to do in the spring, over the Easter break, and after school with your little ones when you want to pass some time.

Here is everything you need to know to make your bunny butt cupcakes.

Recommended Tools:

  • Mixing bowl and electric mixer or stand mixer
  • Cupcake liner and pan
  • Bunny butt ice cube mold
  • Pastry brush or unused clean paintbrush
  • Ziplock baggie or small bowl

Ingredients

First of all, it is a good idea to ensure that you can get all of the ingredients together. Focusing on this first means that the cooking process will be simple. You will need:

For the Cupcakes:

  • White cake mix
  • Water
  • Vegetable oil
  • Egg whites

For the Decoration:

  • Vanilla frosting
  • Pink candy melts
  • White chocolate
  • Coconut
  • Green food coloring

How to Make Bunny Butt Easter Cupcakes

1. Preheat the oven to 350 degrees and line a cupcake pan with cupcake liners.

2. If using a cake mix, prepare that. Add the cake mix, water, oil, and egg whites to a large bowl and beat on low until moistened, then on medium for 2 minutes.

3. Divide the batter between the 24 cupcake liners, and transfer to the oven. Bake for 12-15 minutes, until a toothpick inserted into the center, comes out clean.

4. Allow the cupcakes to cool completely.

5. While the cupcakes are cooling, melt the candy melts. Use the pastry brush to add melted candy to the feet and tail areas of the bunny butt ice cube mold.

6. Melt half of the white chocolate, and fill the rest of the bunny butt mold with the white chocolate. Freeze for 30 minutes to set the chocolate. Remove from the mold. This mold only has ten cavities, so you will need to repeat this process three times or use three molds.

7. Add the coconut to a ziplock baggie, then add ten drops of green food coloring. Close the bag, and shake until the color is blended.

8. Frost the cupcakes.

9. Add a bunny butt to the center on the top of each cupcake.

10. Coat the rest of the exposed frosting of the cupcakes in a generous portion of green coconut, tipping the cupcakes to dump off any excess coconut.

Tips & Tricks

  • You must let the cupcakes cool completely before you add any icing. If you don’t, the icing will simply melt and create a big mess. 
  • Use two cake boxes to double up the quantities. Especially good if you are catering for a large party. 

Variations

  • You don’t need to use a white cake mix. Try chocolate, it will be just as tasty.
  • You can use icing to make other Easter or spring-themed shapes and designs. Maybe create some colorful eggs on top of the cupcakes or perhaps Spring flowers.

When it comes to cupcakes, these are best stored at room temperature. Transfer them to an airtight container that is big enough for them to be stored in one layer, and then leave them on the side or on the counter. They will keep at their best for up to 7 days before starting to dry out a little.

It would be best to freeze them before you add any icing or decoration to them. Freeze the cupcakes in an airtight container or freezer bag and allow them to thaw before adding the icing or frosting. This is a great way to prepare ahead of time or to have an activity ready for the kids when you need something for them to do and enjoy.
