Jack Frost Mimosa

Ingredients

  • 1 cup ice
  • 2 ounces pineapple juice
  • 1/2 ounce coco real
  • 1/2 ounce blue curacao
  • 3 ounces prosecco
  • Extra coco real for rimming the glass
  • Sweetened, shredded coconut for the rim

Instructions

  • Begin by preparing your glass. Add a shallow layer of coco real to a plate, and a layer of coconut to another plate. Dip the rim of the glass into the coco real, then dip it into sweetened, shredded coconut for an extra festive touch.
  • To a cocktail shaker, add ice, pineapple juice, coco real, and blue curacao. Shake well to combine and chill.
  • Pour, strained into your prepared glass.
  • Add 3 ounces prosecco to the glass.
  • Serve and enjoy!

Notes

Make it non-alcoholic by replacing the prosecco with club soda or sparkling water, and leave out the blue curacao and use a splash of orange juice instead.
Want to make it stronger? Add in an extra splash of blue curacao, or top off with more prosecco.
