Ingredients

  • 6 chicken thighs bone in, skin on ( about 1.37 lb | 625 g)
  • 6 peaches skin on, quartered
  • 1 large red onion thinly sliced
  • 5 thyme sprigs
  • 1 teaspoon sea salt to season
  • ½ teaspoon ground black pepper to season
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon minced garlic
  • 3 tablespoons honey
  • 1 tablespoon wholegrain mustard
  • 3 tablespoons Dijon mustard

Instructions

  • Preheat the oven to 392 F | 200 C.
  • Add chicken, peach, onion, and thyme to the baking tray.
  • In a small bowl, stir together salt, pepper, oil, garlic, honey, wholegrain mustard, and Dijon mustard. Pour on the baking tray. Toss all together to cover the chicken, peach and onion.
  • Transfer to the oven and bake for 20 minutes. Until chicken juice runs clean and not red. Check with a skewer or toothpick.
  • Remove and garnish with parsley.
  • Serve with rice or garlic bread.
