Lucky Charms Cake Mix Cookies
These Lucky Charms Cake Mix Cookies are quick and simple to make, and they taste delicious--an easy Saint Patrick's Day treat for a party or just as a snack.

Ingredients
- 15.25 oz box of white cake mix
- ½ cup canola or vegetable oil
- 2 large eggs
- 1 cup lucky charms marshmallows divided, no cereal
Instructions
- Preheat oven to 350°F.
- Line two large cookie sheets with parchment paper and set aside.
- In a medium bowl combine cake mix, oil and eggs. Mix until well incorporated.
- Gently fold ¾ cup of Lucky Charm marshmallows into batter being careful not to crush the marshmallows.
- Scoop cookie dough onto lined cookie sheets using a large scoop. Set cookie dough scoops at least 2” apart.
- Gently press the remaining Lucky Charm marshmallows onto the top of the cookie dough scoops.
- Bake for 10 minutes or until the edges of the cookie are golden.
- Allow cookies to cool on the cookie sheet for 5 minutes before transferring to a wire rack.
