Preheat the oven to 300°F.
Separate the eggs carefully, making sure no egg yolk gets into the whites. Place the egg whites in the bowl of an electric mixer fitted with the whisk attachment. Beat for approximately 1 minute, or until foamy.
Add the meringue powder, if using. Slowly add the granulated sugar in three additions, mixing well after each addition on medium speed.
Increase the mixer speed to medium-high and continue mixing for approximately 5 minutes, or until the meringue forms very stiff peaks and holds its shape.
Add a few drops of red gel food coloring and mix until the desired color is reached.
Sift the almond flour, powdered sugar, and egg white powder (if using) into a clean bowl. Discard any large pieces left behind.
Add the sifted dry ingredients to the meringue. Stir gently until incorporated, then fold the mixture with a spatula. Scrape the bottom and sides of the bowl regularly to ensure no dry ingredients remain.
Continue folding until the batter flows from the spatula in a smooth ribbon and blends back into the mixture within approximately 20 seconds. The batter should have a thick, lava-like consistency.
Transfer the batter to a pastry bag fitted with a large round piping tip. Pipe circles onto a silicone macaron mat or parchment-lined baking sheet, holding the bag approximately ½ inch above the surface.
Firmly tap the baking sheet against the counter several times to release air bubbles. Pop any remaining bubbles with a toothpick.
Allow the piped shells to rest for at least 30 minutes, or until the tops are no longer sticky or tacky.
Bake for approximately 12 minutes. If baking more than one tray at a time, rotate the trays halfway through baking.
Allow the shells to cool completely on the baking sheet before carefully removing them. Store the shells in an airtight container until ready to fill.
