Brownie Cookie Bars with Oreos

Triple Layer Brownie Bars are the ultimate indulgence, combining rich layers of chocolate chip cookie dough, Oreo cookies, and gooey brownie batter into one decadent treat.

Ingredients

  • 1 box brownie mix plus ingredients listed on the box
  • 16 oz refrigerated chocolate chip cookie dough 1 package
  • 14.3 oz double stuffed oreos 1 package
  • Chocolate sauce for drizzling

Instructions

  • Allow the cookie dough to sit out at room temperature for about 10-15 minutes to soften, making it easier to spread
  • Lightly grease an 8x8 baking dish with butter or non-stick spray. Line the bottom and sides of the dish with parchment paper, allowing some overhang for easy removal.
  • Press the softened cookie dough evenly into the bottom of the prepared pan to form the first layer.
  • Arrange the Oreo cookies in a single layer on top of the cookie dough.
  • Prepare the brownie mix according to the package directions.
  • Pour the brownie batter over the Oreo layer, spreading it evenly to cover the cookies.
  • Sprinkle the crushed Oreos evenly over the brownie batter.
  • Bake for 35-40 minutes or when a toothpick inserted into the center comes out mostly clean, with just a few crumbs attached.
  • Before cutting and serving, allow the brownies to cool completely in the dish. Drizzle with chocolate sauce before serving, if desired.

Notes

  • For extra gooeyness, use a fudge brownie mix.
  • You can experiment with different flavors of cookie dough, such as peanut butter or sugar cookies.
  • Serve with ice cream for an even more decadent treat.
  • If using a 9x9 baking dish, adjust your cooking time to 30-35 minutes
 
Make-Ahead: The bars can be baked a day in advance and stored at room temperature in an airtight container.
Freezing Instructions: To freeze, cut the cooled bars into individual squares and wrap each one tightly in plastic wrap. Place them in a freezer-safe container or bag and freeze for up to 3 months. Thaw overnight in the refrigerator before serving.
