Rocky Road Ice Cream

Loaded with marshmallows, chocolate, and almonds, this no-churn rocky road ice cream is jam-packed with flavor for a sweet treat!

Equipment

  • Large bowl and hand mixer, or stand mixer
  • Bread pan

Ingredients

  • 16 oz heavy cream
  • 14 oz sweetened condensed milk
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup mini marshmallows
  • 1/4 cup chocolate chips
  • 1/4 cup almonds

Instructions

  • Add the heavy cream to a large bowl or the bowl of a stand mixer, and beat on high for 3 minutes.
  • Add sweetened condensed milk and beat on high for 1 minute.
  • Slowly mix in cocoa powder.
  • Add marshmallows, chocolate chips, and almonds, then fold in.
  • Pour into a bread pan, and cover with saran wrap.
  • Freeze for at least 8 hours, or overnight, before serving.

Notes

This ice cream recipe takes at least 8 hours to set. I usually allow it to set overnight.
