Instant Pot Ham and Broccoli Rice Casserole

- 1 ½ cups white rice
- 1 tablespoons butter
- 1 onion diced
- 2 cloves garlic minced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 2 cups diced ham
- 4 cups fresh broccoli florets cut into equal pieces
- ½ cup sour cream
- Salt and pepper to taste
Using the saute mode, heat the electric pressure cooker until “hot.” Add the butter and onion. Cook until the onion is softened, about 3 to 5 minutes. Stir in garlic. Cancel the saute mode.
To the electric pressure cooker, add the chicken broth, salt, and rice. Do not stir.
Place the lid on the electric pressure cooker and set the valve to sealing. Set the pressure cooker to “manual” or “pressure cook” for 10 minutes. Quick-release the pressure when the cook cycle is complete.
Stir in the broccoli and ham. Replace the lid and allow the electric pressure cooker to “keep warm” until the broccoli has softened to your desired tenderness. Ideally, this will take 10 to 15 minutes.
Stir in the sour cream and 1 ¾ cups cheddar cheese into the rice. Top with remaining cheddar cheese and place the lid over the pressure cooker just until the cheese melts and the remaining water is absorbed.
