Strawberry Spring Rolls
Fresh strawberries wrapped in spring roll wrappers and fried to a crispy texture. Pair with a chocolate dipping sauce for a chocolate strawberry dessert.

- Sliced fresh strawberries can use sliced frozen strawberries to substitute
- Pack of Spring roll wrappers peeled
- Corn starch slurry or rice flour slurry, or egg wash for sealing the spring roll wrapper
Making the Spring Roll:
Peel the spring roll wrappers apart and set aside, cover the wrappers to avoid drying out
Take a wrapper and position it in a diamond shape in front of you.
Place 3 sliced strawberries horizontally near the bottom corner of the wrapper.
Roll the wrapper once from the bottom towards the top, covering the strawberries, roll it one more time to envelop the strawberries.
Fold in the left and right side of the wrapper to seal in the strawberries.
Continue to finish rolling the wrapper upwards to form the spring roll shape.
Seal the top corner of the wrapper with your slurry mix or egg wash to seal the end of the wrapper. Set the spring roll aside.
Repeat steps 2-7 to create as many strawberry spring rolls as your ingredients allow.
Once the strawberries or the wrappers are exhausted, place the strawberries into a zip lock bag and freeze or deep fry the strawberry spring rolls to serve.
Deep Frying the Spring Rolls:
Fill a small/medium saucepan halfway with oil suitable for deep frying.
Bring the oil to 350°F.
Place 3-5 spring rolls into the oil.
Cook until the exterior of the spring roll is golden brown, this should take 3-4 minutes.
Remove the spring rolls from the oil and place on a plate lined with a paper towel to allow to cool.
Repeat steps 3-5 until spring rolls are all cooked.
Serve the strawberry spring rolls with a sweet dipping sauce such as chocolate dip or whipped cream.
