Cheddar Ranch Chicken

- 2 large boneless skinless chicken breasts
- 1 egg
- ¼ cup milk
- ¾ cup bread crumbs
- 2 tablespoons ranch dressing mix
- 1 cup shredded cheddar cheese
- 4 strips bacon cooked and crumbled
Preheat oven to 400 degrees and prepare a baking sheet by lining with aluminum foil. Spray the sheet with nonstick cooking spray and set aside.
Slice both chicken breasts in half lengthwise.
In a shallow bowl, whisk together the milk and egg.
In a separate bowl, combine the breadcrumbs and ranch dressing mix.
Dip the chicken breasts in the egg mixture, then dip them in the breadcrumb mixture. Press the breadcrumbs into the chicken breast to ensure they stick.
Place the chicken breasts on the baking sheet and spray each breast with nonstick cooking spray.
Bake in the preheated oven for 25 minutes, then remove the chicken and top with cheddar cheese.
Place the chicken back in the oven for five more minutes, until the cheese is melted.
Top with bacon crumbles before serving.
