Loaded Mashed Potatoes

These are not your average mashed potatoes. These babies are loaded with all of your favorite toppings like cheese, bacon, and green onions. So good, you'll never want to make plain mashed potatoes again!

Ingredients

  • 5 Russet potatoes
  • 1 cup Shredded sharp cheddar cheese
  • ½ cup Butter or 1 stick
  • ½ cup Heavy cream
  • ½ cup Chopped bacon bits
  • cup Green onion finely diced (plus extra slices for garnish)
  • 1 tsp Garlic powder
  • ½ tsp Salt
  • ½ tsp Black pepper

Instructions

  • Peel and cut your potatoes into ½-inch pieces.
  • Add to a pot of cold water. Boil on high heat until the potatoes are fork-tender. Drain.
  • Return to your pot and add the butter and cream. Mash with a potato mashed until combined.
  • Stir in cheddar, bacon, green onion, garlic powder, salt, and pepper.
  • Serve with your favorite protein and top with extra sliced green onion.

Notes

  • Refrigerate any leftovers for up to 3 days.
  • Add about ¼ cup of salt to your boiling potatoes for added flavor.
  • You can substitute milk or even chicken stock for the heavy cream. Just use ⅓ cup of either of those ingredients instead of ½ cup.
  • Use any kind of cheese that you like if you don’t enjoy cheddar. Mozzarella melts really well and has a milder flavor.
