- 1 pound white mushrooms washed
- 3 garlic cloves minced or finely chopped
- 2 tablespoons olive oil
- 1 teaspoon fresh parsley
- A pinch of salt and black pepper
Heat up olive oil in a large heavy bottomed skillet over high heat. Add garlic and sauté for a minute, ensure garlic is not burnt.
Add mushrooms. Do not stir the mushrooms. Sear for around 2-3 minutes. Then toss occasionally until the mushrooms start to soften and brown.
Add a pinch of salt. Continue to cook, tossing occasionally. Wait till mushrooms turn to a deep brown color and caramelized. This process takes around 10 minutes. Keep an eye on the heat, turning it down if needed.
Turn off the heat. Add fresh parsley and pepper. Give it a good stir, serve it piping hot.
- Make sure you don’t let the garlic burn when you initially saute it in the skillet. Garlic is great but when burnt it can have a bitter taste which isn’t very pleasant.
- Try and avoid over-stirring the mushrooms. You want them to sear on all sides and have the opportunity to caramelize.
