Sautéed Garlic Mushrooms

Ingredients

  • 1 pound white mushrooms washed
  • 3 garlic cloves minced or finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon fresh parsley
  • A pinch of salt and black pepper

Instructions

  • Heat up olive oil in a large heavy bottomed skillet over high heat. Add garlic and sauté for a minute, ensure garlic is not burnt.
  • Add mushrooms. Do not stir the mushrooms. Sear for around 2-3 minutes. Then toss occasionally until the mushrooms start to soften and brown.
  • Add a pinch of salt. Continue to cook, tossing occasionally. Wait till mushrooms turn to a deep brown color and caramelized. This process takes around 10 minutes. Keep an eye on the heat, turning it down if needed.
  • Turn off the heat. Add fresh parsley and pepper. Give it a good stir, serve it piping hot.

Notes

  • Make sure you don’t let the garlic burn when you initially saute it in the skillet. Garlic is great but when burnt it can have a bitter taste which isn’t very pleasant.
  • Try and avoid over-stirring the mushrooms. You want them to sear on all sides and have the opportunity to caramelize.
