Prepare a baking sheet with parchment paper.
Preheat oven to 400 degrees.
In a small mixing bowl, whisk together the honey and mustard.
In a small dish, beat together egg and water, set aside.
On a floured surface, unfold puff pastry.
Cut four 4” circles out of the puff pastry.
Using a well-floured rolling pin, roll out the circles until thin and about 6.5” wide.
Repeat steps 5 and 6 for the second puff pastry sheet.
On each circle, add 2 heaping tablespoons of ham and 1 heaping tablespoon of cheese.
Drizzle 1 teaspoon of mustard mixture over each filled pastry circle.
Using a basting brush, spread egg wash onto the edge of each circle.
Fold each circle in half and seal by pressing a fork around the edges.
Brush egg wash or mustard sauce over the top of each of the pastries.
Bake for 18-20 minutes or until golden brown.
Allow to cool for 15 minutes before serving.
