Gingerbread Truffles

These bite-sized treats are packed with classic gingerbread flavor and coated in creamy almond bark candy. Plus, gingerbread truffles are super easy to make and perfect for gifting or bringing to holiday parties.

Ingredients

  • 4 cups gingersnap cookies
  • 8 ounces cream cheese softened
  • 12 ounces vanilla almond bark candy
  • 12 ounces chocolate almond bark candy
  • Gingerbread man sprinkles

Instructions

  • Add the gingersnap cookies to a food processor and pulse to crumbs.
  • Add cream cheese to the cookie crumbs, and pulse until combined.
  • Take a cookie sheet and line with parchment paper.
  • Roll the cookie crumb cream cheese mixture into 1 inch balls, placing them onto the parchment paper.
  • Once all of the mixture is rolled, place the cookie sheet into the freezer for 30 minutes.
  • Once the truffle balls are set, melt the vanilla and chocolate almond bark by microwaving in a microwave safe bowl on 30 second increments, or according to your package directions, stirring well.
  • Dip the gingerbread balls into the melted candy, letting the excess drip off, and move back to the parchment paper. Quickly add sprinkles before the chocolate sets.
  • Place the candy-coated truffles into the refrigerator for 30 minutes to allow the candy to fully set.

Notes

Make sure to pulse the gingersnap cookies into fine crumbs to ensure a smooth and even texture in your truffles.
Use softened cream cheese for easier mixing. You can leave it out at room temperature for about 30 minutes or microwave it on low power for a few seconds until soft.
For easy clean-up, line your cookie sheet with parchment paper before rolling out the truffle mixture. This also prevents sticking and makes it easier to remove the truffles once they are set.
Let your truffles chill in the freezer for at least 30 minutes before coating them in melted candy. This helps them hold their shape and makes them easier to coat.
