Ingredients

  • Sliced fresh strawberries (can substitute with sliced frozen strawberries)
  • Peeled, pack of Spring roll wrappers
  • corn starch slurry (or rice flour slurry, or egg wash)

How to Make Strawberry Spring Rolls

Making the Spring Roll:

  • Peel the spring roll wrappers apart and set them aside, cover the wrappers to avoid drying out
  • Take a wrapper and position it in a diamond shape in front of you.
  • Place 3 sliced strawberries horizontally near the bottom corner of the wrapper.
  • Roll the wrapper once from the bottom towards the top, covering the strawberries, and roll it one more time to envelop the strawberries.
  • Fold in the left and right sides of the wrapper to seal in the strawberries.
  • Continue to finish rolling the wrapper upwards to form the spring roll shape.
  • Seal the top corner of the wrapper with your slurry mix or egg wash to seal the end of the wrapper. Set the spring roll aside.
  • Repeat steps 2-7 to create as many strawberry spring rolls as your ingredients allow.
  • Once the strawberries or the wrappers are exhausted, place the strawberries into a zip lock bag and freeze or deep fry the strawberry spring rolls to serve.

Deep Frying the Spring Rolls:

  • Fill a small/medium saucepan halfway with oil suitable for deep frying.
  • Bring the oil to 350°F.
  • Place 3-5 spring rolls into the oil.
  • Cook until the exterior of the spring roll is golden brown, this should take 3-4 minutes.
  • Remove the spring rolls from the oil and place them on a plate lined with a paper towel to allow them to cool.
  • Repeat steps 3-5 until spring rolls are all cooked.
  • Serve the strawberry spring rolls with a sweet dipping sauce of your choice.

What to Serve With These Strawberry Rolls 

You can serve this with a chocolate sauce, caramel sauce, hot fudge, or even whipped cream. These are great to be eaten alone, but even better when you dip them into a sweet sauce. 

I like to give options so people can pick and choose how they want to eat their rolls.

This is a great dessert for parties, anyone who has a sweet tooth is going to enjoy this. 

Storage

Like any fried food these strawberry rolls are best when served fresh and warm from being fried. The outside shell can become soggy once it cools down and gets refrigerated. 

If you do have leftovers go ahead and store them in the fridge. But, just know these do taste a lot better fresh from being fried up. 

You can eat them cold straight from the fridge, or microwave them. Or if you want a crispier texture then go ahead and preheat the oven and toss them in to reheat that way. They will have a slightly more crisp texture. Where the microwave will make them a bit soft. 

Tips & Questions

Can I Use Other Fruit In This Recipe
You are more than welcome to use any fruit you want in this recipe. Any type of berries, kiwi, bananas, etc. Get creative and add a mix of fruit or swap with just one type of fruit. 

Just remember if you use something like bananas or even apples they will brown a bit since they are exposed to air and getting cooked. 

Tips For Getting Spring Roll To Seal 
Using a slurry mix with cornstarch and water or an egg wash is required. This is what you will use to brush around the edges. Then as you fold up your roll it will stick. 

Otherwise, you will find if you skip the mixture as the paste, it will break open and not stay sealed. Either method will work, so it is up to you if you want egg or cornstarch mix to be used.
